Today we will start with these oat bites! My husband and kids love love love them! 

Peanut Butter Oat Bites

Healthy, delicious, and packed with protein, these Peanut Butter Oat Bites are the perfect grab-and-go snack. They’re naturally gluten-free, refined sugar-free, and made with simple ingredients. I love making a batch at the beginning of the week so there’s always a nourishing snack ready in the fridge.

Ingredients

  • 1 ⅓ cups creamy peanut butter (I grind my own with no added sugar)
  • 2 cups old-fashioned or rolled oats
  • 1 cup flaxseed meal 
  • 4 ½ tablespoons honey
  • 2 cups 72% cacao dark chocolate chips ( I have also used 85% cacao chocolate bars chopped up)

Instructions

  1. Combine all ingredients in a medium bowl and stir well until everything is evenly mixed.
  2. Place the mixture in the refrigerator for 15–30 minutes so it’s easier to handle. (You can also leave it overnight and roll them in the morning.)
  3. Using a spoon or small scoop, roll the mixture into small balls. (Using a slightly wet measuring spoon helps with scooping!)
  4. I got about 24 bites, although they were a little wonky—and that’s okay!
  5. Store in the refrigerator for up to one week.
Enjoy these as a quick snack, post-workout bite, or healthy treat when you want something sweet but nourishing.
💡 Tip: You can also add shredded coconut, chia seeds, or chopped nuts for extra texture and nutrition
